Beef Tenderloin Roast On Pellet Grill
Reduce temperature to 375 and roast 25 to 30 minutes or until a meat thermometer inserted in thickest portion registers 130 for medium rare or to desired degree of doneness.
Beef tenderloin roast on pellet grill. Cream together the butter garlic worchestershire sauce rosemary salt pepper and mustard. Remove beef tenderloin after reverse sear reaching 145 degrees. Cover and let stand at room temperature for 30 minutes. This will take anywhere from 15 25 minutes with one turn of the meat during that time to maintain the evenness we re working towards.
Season the entire beef tenderloin with garlic salt and pepper place the beef tenderloin on the smoker set at 225 degrees until it reaches 135 degrees remove beef tenderloin from smoker and reverse sear on a propane grill or increase smoker heat to 400 degrees. Place tenderloin on grill grate. For sides beef tenderloin is perfect with grilled broccolini roasted potatoes or your favorite sautéed greens. Apply your previously prepared smoked beef tenderloin rub generously all over the cut and leave it in the refrigerator for at least 2 hours.

After searing i transfer the roast to the cooler side of the grill cover it and allow the meat to cook over indirect heat until it hits the desired final temperature 120 f for rare 130 f for medium rare and so on. Pat dry tenderloin and cover completely with butter mixture softly pressing to adhere. 6 reduce grill temperature to 375 f and continue to cook until meat reaches an internal temperature of 130 f for medium rare about 25 to 30 minutes. In my case i did leave my beef tenderloin in the refrigerator overnight for just over 10 hours.
